Not only am I admittedly obsessed with this restaurant but I think it represents a promising new wave of chefs and restauranteurs moving away from the ultra-depressing trend of “hype beast”, foodie influencer-powered concepts that plague this city and going back to creating real restaurants that will one day become institutions. Mark is unfiltered, honest and super talented and he shares the good the bad and the ugly from the opening days of Cane Pazzo in an extremely refreshing way. We also discuss why NO ONE should have been surprised that Joyland closed after only one year, why David Chang’s risotto take is horrible and how consistency and actually caring about your team and the guest, is concept enough.

Episode 284: Around the World in 80 Years: an interview with my Papa Dale

This was originally recorded in 2019 at my Grandfather’s home in Goose Creek. I sit down to interview William Dale Ribbeck aka ‘Papa Dale’ and we discuss his big life as a sailor in the United States Navy. He retired as a distinguished Master Diver and his impact on my life is immeasurable. He passed away peacefully in his sleep last night and I am sharing this episode again as a comfort to myself and the many many many people who loved him. When I moved to New York in my early twenties he left me with this advice and I think we can all use it.
